Here is the recipe for Apple Cinnamon Loaf Cake.
Why This Works
Using both brown sugar and white sugar creates a depth of sweetness, with the brown sugar adding moisture and a hint of molasses. Tossing the apples in cinnamon and sugar before adding them to the batter ensures every bite is flavorful and prevents the apple pieces from sinking to the bottom.
Ingredients
For the Apple Cinnamon Swirl:
-
1 large apple, peeled, cored, and finely chopped (Granny Smith, Honeycrisp, or Fuji work well)
-
2 tbsp granulated sugar
-
1 tsp ground cinnamon
For the Loaf Cake:
-
1 ½ cups all-purpose flour
-
1 tsp baking powder
-
½ tsp baking soda
-
½ tsp salt
-
1 tsp ground cinnamon
-
½ cup (1 stick) unsalted butter, softened
-
¾ cup granulated sugar
-
¼ cup light brown sugar, packed
-
2 large eggs, at room temperature
-
1 tsp vanilla extract
-
½ cup sour cream (or plain Greek yogurt), at room temperature
For the Cinnamon Glaze (Optional, but Highly Recommended):
-
½ cup powdered sugar, sifted
-
1-2 tbsp milk or heavy cream
-
¼ tsp ground cinnamon
Instructions
Step 1: Prepare for Baking
-
Preheat your oven to 350°F (175°C) .
-
Grease and flour a 9×5-inch loaf pan, or line it with parchment paper, leaving some overhang on the long sides to easily lift the cake out after baking.
Step 2: Prep the Apples
-
In a small bowl, toss the chopped apples with 2 tbsp of granulated sugar and 1 tsp of cinnamon. Set aside. This maceration draws out a little juice and intensifies the flavor.
Step 3: Mix the Dry Ingredients
-
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and 1 tsp of cinnamon. Set aside.
Step 4: Cream the Butter and Sugars
-
In a large bowl, using a hand mixer or stand mixer with the paddle attachment, beat the softened butter, ¾ cup granulated sugar, and ¼ cup brown sugar together until light and fluffy (about 2-3 minutes).
-
Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl as needed.
-
Beat in the vanilla extract.
Step 5: Combine Wet and Dry
-
With the mixer on low speed, add about one-third of the flour mixture to the butter mixture, mixing until just combined.
-
Add half of the sour cream, mixing until just combined.
-
Repeat with another third of flour, then the remaining sour cream, and finally the remaining flour. Mix until just combined—do not overmix. The batter will be thick.
Step 6: Layer and Swirl
-
Pour half of the batter into the prepared loaf pan and spread it into an even layer.
-
Sprinkle half of the cinnamon-sugar apple mixture over the batter.
-
Pour the remaining batter over the apples and spread gently to cover.
-
Top with the remaining apples and any juices from the bowl. Lightly press them into the top of the batter. Use a knife to gently swirl the apples into the top layer for a marbled effect.
Step 7: Bake
-
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
-
If the top is browning too quickly after 30 minutes, loosely tent the pan with aluminum foil.
-
Let the cake cool in the pan on a wire rack for 15 minutes. Then, carefully remove it from the pan (using the parchment overhang if you used it) and let it cool completely on the rack.
Step 8: Glaze and Serve
-
Once the cake is cool, make the glaze: In a small bowl, whisk together the powdered sugar, 1 tbsp of milk, and ¼ tsp of cinnamon. Add more milk a few drops at a time until you reach a drizzling consistency.
-
Drizzle the glaze over the cooled loaf cake. Let it set for a few minutes before slicing.
Tips for the Best Apple Cinnamon Loaf Cake
-
Apple Choice: Granny Smith apples are a classic choice because their tartness balances the sweet batter. Honeycrisp or Fuji also work wonderfully for a sweeter cake.
-
Room Temperature Ingredients: Ensure your butter, eggs, and sour cream are at room temperature. This helps them emulsify properly, resulting in a smooth, evenly textured cake.
-
Don’t Overmix: Overmixing the batter once the flour is added will develop the gluten, leading to a tough, dense cake instead of a tender, soft one. Mix just until the flour disappears.
-
Check for Doneness: Ovens vary. Start checking at 50 minutes. If the toothpick comes out with wet batter, give it more time.
Variations
-
Apple Walnut: Fold ½ cup of chopped toasted walnuts into the batter along with the apples for added crunch.
-
Caramel Apple: Omit the cinnamon glaze and drizzle the cooled cake with warm salted caramel sauce instead.
-
Spiced Apple: Add ¼ tsp of nutmeg and ¼ tsp of ground cloves to the dry ingredients for a more intense spice profile.
