Cinnamon Swirl Apple Fritter Bread
This moist, tender loaf is packed with sweet cinnamon-spiced apples and swirled with a cinnamon-sugar ribbon — like the heart of an apple fritter in bread form.
Ingredients
For the Apple Filling:
-
2 medium apples (like Honeycrisp or Granny Smith), peeled and diced small
-
2 tbsp unsalted butter
-
2 tbsp brown sugar
-
1 tsp cinnamon
-
¼ tsp nutmeg (optional)
For the Cinnamon Swirl:
-
⅓ cup packed brown sugar
-
1 tbsp cinnamon
For the Bread Batter:
-
½ cup unsalted butter, softened
-
⅔ cup granulated sugar
-
2 large eggs, room temperature
-
1 ½ tsp vanilla extract
-
1 ½ cups all-purpose flour
-
1 ¾ tsp baking powder
-
½ tsp salt
-
½ cup milk (whole or buttermilk recommended)
For the Vanilla Glaze (Optional):
-
1 cup powdered sugar
-
2–3 tbsp milk or cream
-
½ tsp vanilla extract
Instructions
1. Cook the Apples
-
In a skillet over medium heat, melt butter.
-
Add diced apples, brown sugar, cinnamon, and nutmeg.
-
Cook 5–7 minutes until apples are tender but not mushy. Set aside to cool.
2. Make the Cinnamon Swirl
In a small bowl, mix brown sugar and cinnamon. Set aside.
3. Make the Batter
-
Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
-
In a large bowl, cream butter and sugar until light and fluffy.
-
Beat in eggs one at a time, then add vanilla.
-
In a separate bowl, whisk together flour, baking powder, and salt.
-
Gradually add dry ingredients to wet, alternating with milk, beginning and ending with flour. Mix until just combined.
4. Assemble
-
Spread half the batter in the loaf pan.
-
Sprinkle half the cinnamon swirl mixture over batter, then spread half the cooked apples on top.
-
Spoon remaining batter over apples (spread gently to cover).
-
Top with remaining cinnamon sugar and apples, pressing lightly into batter.
-
Use a knife to gently swirl layers (don’t overmix).
5. Bake
Bake 50–65 minutes, until a toothpick inserted in the center comes out clean.
If top browns too quickly, loosely tent with foil after 30 minutes.
6. Cool & Glaze
-
Cool in pan 15 minutes, then transfer to wire rack.
-
If using glaze, whisk ingredients until smooth and drizzle over cooled bread.
📝 Tips for Success
-
Use firm apples to avoid sogginess.
-
Don’t overmix batter — keep it tender.
-
Let bread cool completely before slicing for clean cuts.
-
Optional add-ins: ½ cup chopped walnuts or pecans in the swirl layer.
-
Store wrapped at room temperature up to 3 days, or refrigerate up to 5 days.
