The Honey Lime Chicken & Avocado Rice Stack is all about building layers of flavor and texture: sweet and tangy chicken, creamy avocado, and zesty rice, all stacked neatly on a plate.
This is a fantastic recipe for entertaining because it looks incredibly impressive, but it’s made of simple, fresh components. The “stack” is usually formed using a ring mold (or a clean tuna can with the top and bottom removed).
Here is a complete guide to making this dish.
Honey Lime Chicken & Avocado Rice Stack
Serves: 4
Prep time: 20 minutes
Cook time: 20 minutes
Ingredients
For the Honey Lime Chicken:
-
2 large boneless, skinless chicken breasts (or 4 small cutlets)
-
Salt and pepper, to taste
-
1 tbsp olive oil
-
¼ cup honey
-
¼ cup low-sodium soy sauce (or tamari)
-
2 tbsp fresh lime juice (about 1 lime)
-
2 cloves garlic, minced
-
1 tsp lime zest
For the Avocado Rice:
-
1 cup white or brown rice (jasmine or basmati work well)
-
2 cups water or chicken broth
-
1 large ripe avocado
-
2 tbsp fresh lime juice
-
¼ cup chopped fresh cilantro
-
Salt, to taste
For Assembly & Garnish:
-
1 large avocado, sliced (for layering)
-
Fresh cilantro leaves
-
Lime wedges
-
Optional: Sour cream or crema, for drizzling
-
Optional: Diced mango or black beans for extra layers
Instructions
Step 1: Cook the Rice
-
Cook the 1 cup of rice according to package directions using water or chicken broth for more flavor.
-
Once cooked, fluff with a fork and let it cool slightly.
Step 2: Prepare the Chicken
-
Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness (about ½ inch) for quick, even cooking. Season both sides with salt and pepper.
-
In a small bowl, whisk together the honey, soy sauce, lime juice, minced garlic, and lime zest.
Step 3: Cook the Chicken
-
Heat the olive oil in a large skillet over medium-high heat.
-
Add the chicken and sear for 4–5 minutes per side, until golden brown and cooked through (internal temperature of 165°F / 74°C).
-
Glaze: In the last 2 minutes of cooking, pour the honey lime sauce into the pan. It will bubble rapidly. Spoon the sauce over the chicken repeatedly until it thickens slightly and coats the chicken in a glossy glaze.
-
Remove the chicken from the pan and let it rest for 5 minutes before slicing it into strips or cubes.
Step 4: Make the Avocado Rice
-
In a bowl, mash the ripe avocado with a fork.
-
Add the warm (not hot) cooked rice, 2 tbsp of lime juice, chopped cilantro, and salt to taste.
-
Stir vigorously until the rice is evenly coated and turns a beautiful pale green color. The warmth of the rice will help the avocado melt into a creamy coating.
Step 5: Assemble the Stacks
You will need a ring mold (4-inch diameter) or a clean, empty tuna can with both ends removed.
-
First Layer: Place the ring mold in the center of a serving plate. Spoon a generous layer of the Avocado Rice into the bottom and press down firmly with the back of the spoon.
-
Second Layer: Add a layer of sliced fresh avocado on top of the rice.
-
Third Layer: Top with the sliced Honey Lime Chicken.
-
Remove the Mold: Carefully lift the ring mold straight up to reveal the stack.
-
Garnish: Sprinkle with fresh cilantro leaves and place a lime wedge on the side. For an extra touch, drizzle a little extra honey or a swirl of crema around the plate.
Tips for the Perfect Stack
-
Pressing is Key: To get a clean stack that doesn’t topple, you must press each layer down firmly before adding the next.
-
Sticky Rice: Using slightly sticky rice (like sushi rice or jasmine) helps the layers hold together better than long-grain rice.
-
Wet the Mold: Lightly spray the inside of the ring mold with cooking spray before starting. This ensures the rice releases cleanly without sticking.
-
Warm vs. Cold: This dish is best served immediately while the chicken is warm and the avocado rice is fresh. If preparing ahead, keep components separate and assemble just before serving to prevent browning.
Variations
-
Spicy: Add ½ tsp of red pepper flakes or sriracha to the honey lime sauce.
-
Black Bean Layer: Add a layer of seasoned black beans between the rice and the avocado for extra protein and texture.
-
Grains: Swap the rice for quinoa for a different texture and added protein.
This is a beautiful, balanced meal. Would you like a recipe for a Cilantro Lime Crema to drizzle on top?
