Ingredients
(Serves 4)
For the Teriyaki Sauce:
-
½ cup low-sodium soy sauce (or tamari)
-
¼ cup honey or brown sugar
-
2 tablespoons rice vinegar
-
1 tablespoon sesame oil
-
2 cloves garlic, minced
-
1 tablespoon fresh ginger, grated
-
1 tablespoon cornstarch + 2 tablespoons water (slurry)
For Each Foil Packet:
-
1 boneless, skinless chicken breast or 2 thighs, cubed (about 6 oz)
-
¾ cup fresh pineapple chunks
-
½ red bell pepper, sliced
-
¼ red onion, sliced
-
¼ cup sliced scallions
-
1 teaspoon sesame seeds
-
Fresh cilantro, for garnish (optional)
-
Cooked rice or quinoa, for serving
Instructions
Step 1: Make the Teriyaki Sauce
-
In a small saucepan, combine soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
-
Bring to a simmer over medium heat.
-
Stir cornstarch slurry and whisk into the sauce. Cook 1–2 minutes until thickened. Remove from heat.
Step 2: Assemble the Packets
-
Preheat grill to medium-high (or oven to 400°F / 200°C).
-
Tear four large sheets of heavy-duty aluminum foil (about 12×18 inches).
-
Divide chicken, pineapple, bell pepper, and onion evenly among foil sheets, placing ingredients in the center.
-
Spoon 2–3 tablespoons teriyaki sauce over each portion.
Step 3: Seal the Packets
-
Bring the long sides of the foil together and fold down twice, leaving room for steam.
-
Fold short ends up to fully seal—packets should be airtight but with some space inside.
Step 4: Cook
-
Grill: Place packets on preheated grill. Cook 18–22 minutes until chicken is cooked through (165°F).
-
Oven: Bake on a sheet pan for 20–25 minutes.
Step 5: Serve
-
Carefully open packets (steam will be hot).
-
Sprinkle with sesame seeds and fresh cilantro.
-
Serve over rice or quinoa, spooning extra sauce from packet over the top.
