Instructions:

Preheat & Prep: Preheat your oven to 375°F (190°C). Lightly spray an 8×8-inch or 9×9-inch square baking dish with non-stick spray.

Sauté the Vegetables: Heat the teaspoon of olive oil in a very large non-stick skillet over medium-high heat. Add the sliced mushrooms and onion. Cook, stirring occasionally, until the mushrooms release their liquid and it evaporates, and the mushrooms get beautifully golden brown (about 8-10 minutes). Don’t rush this step; the browning is pure flavor. Add the minced garlic and cook for 30 seconds until fragrant. Add the spinach in big handfuls, stirring until it all wilts down. Season with salt, pepper, and nutmeg. Remove from heat and set aside.

Make the Cottage Cheese Filling: In a medium bowl, combine the cottage cheese, Greek yogurt, beaten egg, 2 tablespoons of the Parmesan cheese, garlic powder, and parsley. Stir well. For an ultra-creamy, ricotta-like texture, you can blitz this mixture in a food processor for 30 seconds until smooth. This is a game-changer if you dislike the texture of cottage cheese curds.

Sprinkle with the final 1/3 of the mozzarella and the remaining 2 tablespoons of Parmesan.

Bake: Cover the dish tightly with foil (spray the underside with non-stick spray so it doesn’t stick to the cheese) and bake for 30 minutes. Remove the foil and bake for another 15-20 minutes, until the lasagna is bubbly all over and the top is beautifully golden with some brown spots.

The Crucial Rest: This is the hardest part, but absolutely necessary. Let the lasagna rest on the counter for at least 10-15 minutes before slicing. This allows it to set up and not slide apart into a soupy mess on your plate.
