Here’s a hearty recipe for Beef Cowboy Soup—a rustic, filling soup packed with ground beef, beans, vegetables, and bold Southwestern flavor.
Ingredients
-
1½ lbs ground beef
-
1 medium onion, diced
-
3 cloves garlic, minced
-
2 medium potatoes, diced small (Yukon gold or russet)
-
2 carrots, sliced
-
2 stalks celery, diced
-
1 can (14.5 oz) diced tomatoes, undrained
-
1 can (10 oz) Rotel tomatoes with green chiles, undrained
-
1 can (15 oz) kidney beans, drained and rinsed
-
1 can (15 oz) pinto beans, drained and rinsed
-
1 can (15 oz) corn, drained (or 1½ cups frozen corn)
-
4 cups beef broth
-
2 cups water
-
1 packet (1 oz) ranch seasoning mix
-
1 packet (1 oz) taco seasoning mix
-
1 tsp cumin
-
1 tsp chili powder
-
Salt and black pepper to taste
-
Optional toppings: shredded cheddar, sour cream, fresh cilantro, sliced jalapeños, tortilla chips
Instructions
-
Brown the beef: In a large Dutch oven or heavy-bottomed pot over medium-high heat, cook the ground beef until browned, breaking it up as it cooks, about 6-8 minutes. Drain excess grease if needed.
-
Sauté vegetables: Add the onion and garlic to the pot with the beef. Cook for 3-4 minutes until the onion softens.
-
Add remaining vegetables and seasonings: Stir in the potatoes, carrots, celery, cumin, chili powder, ranch seasoning, and taco seasoning. Cook for 1-2 minutes to toast the spices.
-
Add liquids and tomatoes: Pour in the diced tomatoes, Rotel, beef broth, and water. Stir to combine.
-
Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until the potatoes and carrots are tender.
-
Add beans and corn: Stir in the kidney beans, pinto beans, and corn. Simmer uncovered for another 10 minutes to let the flavors meld.
-
Season to taste: Add salt and black pepper as needed.
-
Serve hot with your favorite toppings like shredded cheddar, a dollop of sour cream, fresh cilantro, and tortilla chips on the side.
Tip: This soup is even better the next day! It also freezes well for up to 3 months.
