Slow Cooker Honey Soy Chicken

Ingredients

2.5 – 3 lbs boneless, skinless chicken thighs (chicken breast works too, but thighs stay more tender)

1/2 cup low-sodium soy sauce

1/2 cup honey

1/4 cup tomato ketchup (adds depth and helps thicken)

4 cloves garlic, minced

1 tablespoon rice vinegar or apple cider vinegar

1 teaspoon sesame oil

1/2 teaspoon dried red pepper flakes (optional, for a little heat)

1/4 teaspoon black pepper

2 tablespoons cornstarch mixed with 3 tablespoons cold water (for a slurry to thicken the sauce at the end)

Instructions
1. Prepare the Sauce:
In a medium bowl or a large measuring cup, whisk together the soy sauce, honey, ketchup, minced garlic, rice vinegar, sesame oil, red pepper flakes (if using), and black pepper until well combined.
2. Load the Slow Cooker:
Place the chicken thighs in the bottom of your slow cooker. Pour the honey soy sauce mixture over the top, making sure all the chicken pieces are well coated.
3. Slow Cook:
Cover and cook on HIGH for 3-4 hours or on LOW for 5-6 hours, until the chicken is very tender and easily shreds with a fork.
4. Thicken the Sauce (The Key Step):
Once the chicken is cooked, carefully remove it from the slow cooker to a cutting board or bowl, leaving the cooking liquid behind.
In a small bowl, create a smooth slurry by whisking together the 2 tablespoons of cornstarch and 3 tablespoons of cold water. Pour this slurry into the liquid in the slow cooker and whisk to combine. Cover and cook on HIGH for another 15-20 minutes, or until the sauce has thickened into a glossy glaze. (If your slow cooker doesn’t heat strongly, you can pour the liquid into a small saucepan and bring it to a boil on the stovetop with the slurry instead.)
5. Shred and Glaze the Chicken:
While the sauce is thickening, shred the chicken with two forks. Return the shredded chicken to the slow cooker and toss it well to coat evenly in the thickened glaze.
6. Serve:
Serve the sticky honey soy chicken over a bed of steamed rice or noodles. Garnish generously with sliced green onions and a sprinkle of toasted sesame seeds. A side of steamed broccoli or bok choy completes the meal perfectly.
