Slow Cooker Onion Burger Steaks — tender beef patties smothered in a rich, savoury onion gravy. It’s a hands-off, set-it-and-forget-it meal that tastes like it simmered all day.
🧅 Slow Cooker Onion Burger Steaks

Ingredients
For the patties:

700g (1.5 lbs) lean minced beef

1/2 cup breadcrumbs

1 small onion, finely grated

1 egg
-
1 tbsp Worcestershire sauce
-
1 tsp garlic powder
-
1 tsp salt

1/2 tsp black pepper
For the gravy:

2 large onions, thinly sliced
-
2 tbsp butter
-
2 tbsp plain flour
-
1 x 300ml (10 oz) can condensed French onion soup (or cream of mushroom)

1/2 cup beef stock
-
1 tbsp Worcestershire sauce
-
1/2 tsp dried thyme
-
Salt and pepper to taste
To serve:

Fresh parsley, chopped

Mashed potatoes or egg noodles
Method
1. Form the patties
In a bowl, combine all patty ingredients and mix gently until just combined — overmixing makes them tough. Shape into 4 oval patties about 2cm thick. Place on a plate and chill while you start the gravy.
2. Caramelise the onions (optional but recommended)
For deeper flavour, melt the butter in a pan over medium-low heat and cook the sliced onions for 10–15 minutes until soft and golden. This step avoids raw onion in the final gravy. If you’re in a rush, just slice them thinly and add them raw to the slow cooker.
3. Make the gravy base
Sprinkle the flour over the softened onions, stir, and cook for 1 minute. Slowly stir in the soup and beef stock, add the Worcestershire sauce and thyme, and bring to a simmer until slightly thickened. Season with pepper (hold the salt — the soup is usually salty).
4. Assemble in the slow cooker
Pour half the gravy into the slow cooker. Lay the chilled patties in a single layer, then pour the remaining gravy over the top, ensuring the patties are mostly submerged.
5. Cook low and slow
Cover and cook on LOW for 5–6 hours or on HIGH for 3–4 hours, until the patties are cooked through and tender. Avoid lifting the lid too often.
6. Serve
Taste the gravy and adjust seasoning. Serve the burger steaks over mashed potatoes or buttered noodles, spooning plenty of onion gravy on top. Garnish with parsley.
Tips

Searing first (extra flavour): Quickly brown the patties on both sides in a hot pan before the slow cooker. It’s not essential, but it adds a lovely crust and boosts the gravy flavour.

Gluten-free: Use GF breadcrumbs and thicken the gravy with a cornflour slurry (1 tbsp cornflour mixed with 2 tbsp cold water) added in the last 30 minutes.

Make-ahead: The gravy deepens overnight. Reheat gently on the stove with a splash of water if it thickens too much.
