Individual mini meatloaf trays baked over onions, potatoes, and carrots in a rich beef gravy. Here’s a recipe that will give you a very similar result.
Mini Meatloaf Dinner Trays (Makes 4)
Ingredients
For the meatloaf
- 500 g lean beef mince
- 250 g pork mince (or use all beef)
- 1 egg
- ½ cup breadcrumbs
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tbsp ketchup
- 1 tsp Dijon mustard (optional)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp dried parsley
Vegetables
- 2 medium potatoes, sliced about ½ cm thick
- 3 carrots, cut into large chunks
- 1 onion, sliced into rings
Gravy
- 2 cups beef stock
- 2 tbsp Worcestershire sauce
- 1 tbsp onion soup mix (optional, for extra flavour)
- 1 tbsp butter
- 1 tbsp cornflour mixed with 2 tbsp cold water (to thicken after baking, if needed)
Instructions
- Preheat the oven to 190°C (375°F).
- Mix the meatloaf.
- Combine all the meatloaf ingredients.
- Divide into 4 equal portions and shape into thick patties or small loaves.
- Prepare the trays.
- Place sliced onions on the bottom.
- Add potato slices and carrot chunks.
- Pour about ½ cup of beef stock mixture into each tray.
- Add the meatloaf.
- Place one meatloaf on top of the vegetables in each tray.
- Cover tightly with foil.
- Bake
- Covered: 45 minutes
- Remove foil and bake another 20–25 minutes until the meat is browned and reaches 71°C (160°F) internally.
- Finish the gravy (optional).
- Pour the cooking juices into a saucepan.
- Stir in the cornflour slurry and simmer until thickened.
- Spoon the gravy back over the meatloaf.
Optional glaze
For a glossy top like many meatloaf recipes:
- 3 tbsp ketchup
- 1 tbsp brown sugar
- 1 tsp Worcestershire sauce
Mix together and brush over the meatloaf during the last 15 minutes of baking.
Serve straight from the foil trays with crusty bread or buttered green beans. The vegetables will absorb the beef juices and become tender while the meatloaf stays moist.
