Homemade Turtle Candy—those irresistible clusters of toasted pecans, soft caramel, and rich chocolate. They’re a holiday staple for a reason.
Homemade Turtle Candy
Why This Works
This version uses simple, real ingredients. The combination of buttery caramel, crunchy toasted pecans, and melted chocolate creates that signature “turtle” shape and flavor. Toasting the pecans is a small step that makes a huge difference.
Ingredients
For the Turtles:
-
2 cups pecan halves (the fresher, the better)
-
25–30 individually wrapped soft caramels (like Kraft, about one 11-oz bag)
-
2 tablespoons heavy cream or milk
-
1 cup semi-sweet or milk chocolate chips
-
1/2 teaspoon coconut oil or shortening (optional, for smoother chocolate)
-
Flaky sea salt (optional, but highly recommended)
Instructions
1. Toast the Pecans (5–7 min)
-
Preheat your oven to 350°F (175°C).
-
Spread the pecan halves on a dry baking sheet. Toast for 5–7 minutes, until fragrant and slightly darker. Watch them closely—they burn quickly. Let them cool completely. This step intensifies the nutty flavor.
2. Arrange the Pecan Clusters
-
Line a baking sheet with parchment paper or a silicone mat.
-
Group the cooled pecans into small clusters on the sheet. For classic turtles, place 3-4 pecan halves together in a “Y” shape (two for back legs, one for the head), or simply make tight, flat piles of 4-5 halves.
3. Make the Caramel
-
Unwrap the caramels and place them in a microwave-safe bowl. Add the 2 tablespoons of heavy cream.
-
Microwave in 30-second bursts, stirring well between each, until completely smooth and melted. Be patient—this usually takes about 1.5 to 2 minutes total.
-
Spoon carefully: Using a spoon, drop about 1 teaspoon of melted caramel onto the center of each pecan cluster, aiming to connect the nuts without completely flooding the pan.
4. Set the Caramel
-
Place the baking sheet in the refrigerator for 10–15 minutes, just until the caramel firms up and is no longer sticky to the touch.
5. Melt the Chocolate
-
Combine the chocolate chips and coconut oil (if using) in a clean, dry microwave-safe bowl.
-
Microwave in 20–30 second bursts, stirring very well each time, until completely smooth. Don’t overheat or the chocolate will seize.
6. Top with Chocolate
-
Spoon about 1 teaspoon of melted chocolate over the top of each chilled caramel-nut cluster. Let it naturally spread to cover the caramel and just touch the nuts. Don’t worry about perfection; organic shapes look more like real turtles.
-
Optional: While the chocolate is still wet, sprinkle with a tiny pinch of flaky sea salt. This cuts the sweetness beautifully.
7. Final Set
-
Refrigerate the tray for another 20–30 minutes until the chocolate is fully set.
Storage: Keep in an airtight container in a cool, dry place for up to a week. If your kitchen is warm, store them in the fridge and let them sit at room temperature for 5 minutes before eating so the caramel softens.
Is this the style you remember, or did your family’s version use something like a full coating of chocolate and homemade caramel? I’m happy to tweak the recipe for you.
