Classic Cherry Delight is a beloved, old-fashioned no-bake dessert that has graced potlucks, church suppers, and holiday tables for generations. It features a buttery graham cracker (or sometimes pecan shortbread) crust, a luscious layer of sweetened cream cheese and whipped topping, and is finished with a glossy, sweet-tart cherry pie filling.
It takes only about 15 minutes to assemble, but it needs time in the fridge to set perfectly. Here is how to make this timeless recipe.
Ingredients
For the Crust:
-
2 ½ cups graham cracker crumbs (about 18-20 whole graham crackers, crushed)
-
½ cup (1 stick) unsalted butter, melted
-
¼ cup granulated sugar (optional, but adds a nice sweetness to the crust)
For the Cream Cheese Layer:
-
8 oz (1 block) cream cheese, softened to room temperature
-
1 cup powdered sugar (confectioners’ sugar)
-
1 tsp pure vanilla extract
-
8 oz (1 tub) frozen whipped topping (like Cool Whip), thawed in the fridge
For the Topping:
-
1 (21 oz) can cherry pie filling (high-quality or homemade)
Instructions
1. Make the Crust
-
In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar (if using). Stir with a fork until the mixture resembles wet sand and holds together when you squeeze it.
-
Reserve about 2–3 tablespoons of the crumb mixture to sprinkle on top at the end (optional, but makes it look beautiful).
-
Press the remaining crumb mixture firmly and evenly into the bottom of a 9×13-inch baking dish (or a 9-inch square dish for thicker layers). Use the flat bottom of a measuring cup to pack it down tightly.
-
Place the crust in the refrigerator or freezer to firm up while you make the filling.
2. Make the Cream Layer
-
In a large mixing bowl, beat the softened cream cheese with an electric hand mixer until it is completely smooth and free of lumps.
-
Add the powdered sugar and vanilla extract. Beat on low speed until incorporated, then increase to medium speed and beat until fluffy.
-
Gently fold in the thawed whipped topping using a rubber spatula. Do not use the mixer for this step, or you will deflate the air out of the Cool Whip. Fold slowly until the mixture is uniform and creamy.
3. Assemble
-
Remove the crust from the fridge/freezer. Spoon the cream cheese mixture onto the crust.
-
Using an offset spatula or the back of a spoon, spread it gently into an even layer, making sure to reach the edges and corners.
-
Spoon the cherry pie filling over the cream layer and gently spread it to the edges so every slice gets a bit of cherry.
4. Chill (The Most Important Step)
-
Cover the dish loosely with plastic wrap and refrigerate for at least 4 hours, but preferably overnight. This allows the butter in the crust to re-solidify and the cream layer to set up enough to be sliced cleanly.
5. Serve
-
Right before serving, sprinkle the top with the reserved graham cracker crumbs for a little texture.
-
Slice into squares, serve cold, and enjoy!
Tips for the Perfect Cherry Delight
-
Soften the Cream Cheese: If your cream cheese is even slightly cold, it will form lumps in the batter. Leave it on the counter for 1–2 hours before baking, or microwave it in 10-second intervals until soft (but not melted).
-
Don’t Like Cool Whip? You can make your own stabilized whipped cream. Whip 1 ½ cups of heavy whipping cream with 3 tablespoons of powdered sugar and ½ teaspoon of vanilla until stiff peaks form, then use that in place of the Cool Whip. (Note: If using fresh whipped cream, the dessert is best eaten within 24–48 hours).
-
Upgrade the Crust: For a Southern twist, replace the graham crackers with crushed vanilla wafers or shortbread cookies. You can also add ½ cup of finely chopped pecans to the crust mixture for a delightful crunch.
-
Swap the Fruit: Not a cherry fan? This recipe is incredibly versatile. You can substitute the cherry pie filling for blueberry, strawberry, apple, or peach pie filling!
-
Clean Slicing: For perfect squares, run a large chef’s knife under hot water, wipe it dry, and slice. The warm knife will glide right through the cold layers.
