Creamy Garlic Butter Tuscan Mushrooms
Serves: 4 as a side, 2 as a main
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients
-
1.5 lbs (680g) button or cremini mushrooms, halved or quartered if large (keep them chunky)
-
2 tbsp unsalted butter
-
1 tbsp olive oil
-
6 cloves garlic, minced (don’t be shy here)
-
1/3 cup sun-dried tomatoes, drained and chopped (the oil-packed kind are best)
-
1 cup fresh baby spinach
-
3/4 cup heavy cream (or half-and-half for a lighter version)
-
1/4 cup freshly grated Parmesan cheese
-
1 tsp dried Italian seasoning
-
Pinch of red pepper flakes (optional, for warmth)
-
Salt and freshly ground black pepper, to taste
-
Fresh basil leaves, torn, for garnish
Instructions
1. Sear the Mushrooms:
The cardinal rule for perfect mushrooms: don’t overcrowd the pan. Heat the olive oil in a large, heavy skillet (cast iron is perfect) over high heat. Add the mushrooms in a single layer with a pinch of salt. Sear undisturbed for 3-4 minutes until deeply golden on one side. Then stir and continue cooking for another 4-5 minutes until they’ve released their liquid and that liquid has cooked away, leaving a deep, brown sear all over. Transfer mushrooms to a plate.
2. Build the Flavor Base:
Reduce the heat to medium. Add the butter to the now-empty pan. Once melted, add the minced garlic and cook for 30-45 seconds until incredibly fragrant, but not browning. Add the chopped sun-dried tomatoes and Italian seasoning, stirring for 1 minute.
3. Create the Cream Sauce:
Pour in the heavy cream. Bring it to a gentle simmer, scraping up all the browned mushroom bits from the bottom of the pan with a wooden spoon. Stir in the grated Parmesan cheese until it melts and the sauce begins to thicken slightly, about 1-2 minutes. Add a pinch of red pepper flakes if using, and taste for salt and pepper.
4. Wilt the Spinach and Finish:
Add the fresh spinach to the sauce. Stir gently for about 1 minute until it wilts completely into the creamy mixture. Return the seared mushrooms to the pan and toss to coat them completely in the velvety sauce. Let them simmer together for 1-2 minutes to meld the flavors.
5. Serve:
Pile the mushrooms into a serving dish or spoon them directly over toasted bread, pasta, or polenta. Scatter with torn fresh basil leaves and an extra crack of black pepper. Serve immediately.
What to Serve With Them
-
As a Side: Perfect alongside grilled steak, roast chicken, or seared fish.
-
As a Main: Toss with fettuccine or penne for a quick pasta. Spoon over creamy polenta or mashed potatoes.
-
As an Appetizer: Serve in a small cast-iron dish with plenty of crusty sourdough bread to mop up every drop of the sauce.
Tips & Variations
-
Mixed Mushrooms: Using a mix of cremini, shiitake, and oyster mushrooms elevates the dish with different textures and earthy flavors.
-
Don’t Wash Mushrooms: They’re sponges. Instead, wipe them gently with a damp paper towel or brush off any dirt. Excess water will steam them instead of searing them.
-
Make it Dairy-Free: Use a thick, full-fat canned coconut milk instead of cream and a good vegan parmesan or a tablespoon of nutritional yeast. The flavor profile shifts slightly but is still incredibly delicious.
-
Extra Protein: Stir in pan-seared scallops, shrimp, or shredded rotisserie chicken at the end for a more substantial meal.
