Instructions
1. Prepare the Filling
Chicken: Mix all chicken filling ingredients in a bowl until well combined and creamy. Set aside.
Beef & Potato: Brown the ground beef with onion and garlic in a skillet over medium-high heat, breaking it up. Drain excess fat. Stir in the mashed potato, cumin, paprika, salt, and pepper. Cook 2 more minutes. Let cool slightly.
2. Warm the Tortillas

Wrap corn tortillas in damp paper towels and microwave for 30-45 seconds until soft and pliable. Keep them covered with a clean kitchen towel while you work so they don’t dry out and crack.
3. Roll the Tacos

Place about 2 tablespoons of filling in a line slightly off-center on each tortilla. Roll it up tightly into a cigar shape. Secure the open flap with a toothpick pushed through horizontally. Don’t overstuff—they should be snug and sealed at the seam.
