Ingredients

1 lb smoked sausage (kielbasa or Andouille), sliced into ½-inch rounds. Must be pre-cooked/smoked for food safety.

1 box (16 oz) frozen potato and cheddar pierogies (do not thaw; keep them frozen solid)

1 bell pepper, sliced (optional)

2 tablespoons melted butter or olive oil

Seasoning: 1 tsp garlic powder, 1/2 tsp smoked paprika, salt and pepper

Instructions
1. Prep the Foil
Tear off 4 large sheets of heavy-duty foil (about 12×12 inches). If you only have regular foil, double-layer it to prevent tearing from the pierogi corners.
2. Assemble the Packets
Divide the ingredients evenly among the center of the 4 foil sheets:

Frozen pierogies first.

Sliced sausage, onions, and peppers on top.

3. Seal the Packets (Crucial Step)
Bring the long sides of the foil up together and fold them over twice to create a tight seam. Then, fold in the open ends to create a fully sealed packet. You want steam to circulate inside, but no liquid to leak out.

Do not add water to the crockpot. The packets will self-steam.

If you prefer an ultra-creamy, casserole-style dish and don’t mind softer pierogies, you can line the entire crockpot with foil (creating a bowl) and combine everything.

Important Food Safety Note
Because the foil insulates the food slightly, always use a pre-cooked/smoked sausage. If using raw Italian sausage, you must brown it in a skillet first before adding to the foil packet to ensure it reaches a safe internal temperature, as the slow, gentle steaming in the foil may not kill bacteria quickly enough.
