French Onion Chicken Pot Roast, which is quicker-cooking, lighter, but just as comforting. We’ll braise chicken pieces in a rich onion gravy and finish with that classic cheesy Gruyère toast.
🍗 French Onion Chicken Pot Roast
Serves 4–6
Ingredients
For the chicken:

6–8 bone-in, skin-on chicken thighs (about 1 kg / 2 lbs), or a mix of thighs and drumsticks

1½ tsp salt

½ tsp black pepper
-
1 tbsp olive oil
-
1 tbsp butter
For the onion gravy:
-
3 large onions, thinly sliced (about 5 cups)

3 garlic cloves, minced
-
1 tbsp fresh thyme leaves (or 1 tsp dried)
-
1 tbsp plain flour
-
½ cup (120ml) dry white wine, or extra chicken stock
-
1 cup (240ml) chicken stock
-
1 tbsp Worcestershire sauce
-
1 bay leaf
For the topping:
-
4–6 slices of baguette
-
1 cup (100g) grated Gruyère or Swiss cheese
-
Fresh parsley or thyme, to garnish
Method
1. Brown the chicken
Pat the chicken pieces dry and season with salt and pepper. Heat the olive oil in a large Dutch oven or deep ovenproof pan over medium-high heat. Place the chicken skin-side down and cook for 5–6 minutes until the skin is deep golden and crisp. Flip and cook for 2 minutes on the other side. Do this in batches if needed. Remove to a plate and pour off all but 1 tablespoon of the fat.
2. Caramelise the onions
Add the butter to the same pot and lower the heat to medium. Add the sliced onions and a pinch of salt. Cook for 20–25 minutes, stirring often, until very soft and a rich golden brown. Add the garlic and thyme and cook for 1 minute. Sprinkle in the flour and stir for 1 more minute.
3. Deglaze and build the gravy
Pour in the wine, scraping up all the brown bits from the bottom. Let it bubble for a minute, then add the chicken stock, Worcestershire sauce, and bay leaf. Stir and bring to a gentle simmer.
4. Braise the chicken
Nestle the browned chicken pieces into the onion gravy, skin-side up so the skin stays crispy above the liquid. Cover with a lid and cook in a 160°C (325°F) oven for 45–55 minutes, or until the chicken is cooked through and very tender (internal temp 75°C / 165°F). You can also simmer it gently on the stovetop over low heat for the same time, lid on.
5. Add the cheesy toasts
Remove the lid. Arrange the baguette slices over the top of the onions and chicken, pressing them slightly into the gravy to moisten. Pile the Gruyère on top of the bread. Switch the oven to grill/broil and place the pot, uncovered, under the hot grill for 3–5 minutes until the cheese is melted, bubbling, and golden.
6. Serve
Remove the bay leaf. Serve the chicken straight from the pot, spooning plenty of onion gravy and a cheesy toast onto each plate. It’s excellent with mashed potatoes, buttered noodles, or simply some steamed green beans on the side.
Slow Cooker Version
After browning the chicken and caramelising the onions (steps 1 & 2), transfer everything to the slow cooker. Cook on LOW for 4–5 hours or HIGH for 2–3 hours. The skin will soften, so you can crisp it under the grill after cooking, then add the bread and cheese and grill until bubbly.
Tips

Crispy skin: Keeping the skin above the liquid while braising and finishing under the grill preserves some crunch. If it softens, don’t worry — the flavour is still there.

Boneless thighs: You can use boneless skinless thighs and reduce the cooking time to about 30–35 minutes. Skip the browning or give them a quick sear for flavour.

Wine substitute: The white wine adds brightness. Swap for extra stock plus a splash of white wine vinegar or lemon juice.
