Here is a wonderfully moist, naturally sweet, and satisfying cake that is completely flourless and contains no refined sugar.
The magic of this recipe lies in the ingredients themselves: the natural starches in the oats and apples hold the cake together, while the grated carrot and apple provide so much internal moisture that you don’t need oil or butter. It is perfect for a healthy breakfast, a snack with coffee, or a light dessert.
Why this works
Oats, when ground or soaked, act as a whole-grain binder. Grated apple melts into the batter as it bakes, keeping the crumb tender without the need for flour. The carrots add natural earthy sweetness, while cinnamon and vanilla trick the palate into thinking the cake is sweeter than it actually is.

The Dry Ingredients:

2 ½ cups Rolled Oats (use certified gluten-free oats if you have Celiac disease), divided

1 ½ cups finely grated Apple (about 2 medium apples, like Honeycrisp, Gala, or Fuji) — Do not drain the juice!

1 ½ cups finely grated Carrots (about 3 medium carrots)

½ cup chopped Medjool Dates OR ⅓ cup Raisins (This is your main source of “sugar-free” sweetness; the fruit caramelizes as it bakes)
Instructions
1. Prep and Preheat

Preheat your oven to 350°F (175°C).

Line a 9×5 inch loaf pan or an 8×8 inch square baking dish with parchment paper.
2. Make the “Oat Flour”

Take 1 ½ cups of the rolled oats and place them in a food processor or high-speed blender.

Pulse for 30–60 seconds until the oats turn into a fine, powdery flour.

Pour this oat flour into a large mixing bowl. Add the remaining 1 cup of whole rolled oats to the bowl. (This combination of ground and whole oats gives the cake the perfect dense-but-tender texture).

Add the cinnamon, baking soda, baking powder, salt, and nutmeg to the bowl. Whisk together and set aside.
3. Make the Batter

In a separate large bowl, whisk the eggs. Add the applesauce, melted coconut oil (if using), and vanilla extract. Whisk until completely smooth.

Add the grated carrots, grated apple (with all its juices), and the chopped dates/raisins to the wet ingredients. Stir to combine.
4. Combine Wet and Dry

Pour the wet ingredients into the bowl of dry ingredients.

Using a spatula, fold everything together gently. Do not overmix—overmixing oats can make the final cake a bit gummy. Stir just until there are no dry patches of oat flour left. The batter will look very thick and “chunky,” which is exactly what you want.

5. Bake

The “Toothpick Test”: Because this cake is so moist from the apples and carrots, a toothpick inserted in the center might come out slightly damp. You want it to come out with a few moist crumbs attached, but no wet, shiny batter.

6. The Hardest Part: Cooling

Remove the pan from the oven and let it sit on a wire rack for at least 20–30 minutes.

Why so long? Because there is no flour or gluten to hold the structure, this cake needs to cool completely to “set.” If you slice it while it’s piping hot, it will crumble and fall apart.

How to Make It Vegan/Egg-Free: Replace the 2 eggs with “flax eggs.” Mix 2 tablespoons of ground flaxseed meal with 6 tablespoons of water. Let it sit for 10 minutes until it forms a gel, then add it to the wet ingredients. Note: A vegan version will be a little more delicate and crumbly, so make sure it is 100% cooled before slicing.

Do I need to peel the apples and carrots? No! The skin of the apple and carrot contains a lot of fiber and nutrients. Just wash them well and grate them with a box grater. The skin softens completely in the oven.
