Ingredients
For the Meatloaf:

2 lbs ground beef (80/20 works best)

1 cup freshly grated Parmesan cheese

1 small onion, finely diced

3 cloves garlic, minced

2 large eggs

¾ cup Italian breadcrumbs

½ cup milk

¼ cup fresh parsley, chopped

1 tsp salt

½ tsp black pepper

1 tsp dried oregano

1 tsp dried basil
For the Glaze:

½ cup ketchup

2 tbsp brown sugar

1 tbsp Worcestershire sauce

¼ cup grated Parmesan cheese (for sprinkling on top)

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

Sauté aromatics (optional but recommended): Heat 1 tbsp olive oil in a small pan over medium heat. Cook the onion until soft, about 4-5 minutes. Add garlic and cook 1 more minute. Let cool slightly.

Mix the meatloaf: In a large bowl, combine ground beef, Parmesan, sautéed onion and garlic, eggs, breadcrumbs, milk, parsley, salt, pepper, oregano, and basil. Mix gently with your hands until just combined—don’t overwork the meat or it will become tough.

Shape the loaf: Form the mixture into a loaf shape on the prepared baking sheet, or press into the loaf pan.

Make the glaze: In a small bowl, whisk together ketchup, brown sugar, and Worcestershire sauce. Spread half the glaze over the top of the meatloaf.

Bake for 45 minutes. Remove from oven and spread the remaining glaze on top. Sprinkle with the extra ¼ cup Parmesan.
