Portuguese Linguica & Cabbage Soup
Servings: 6-8
Prep Time: 15 minutes
Cook Time: 45 minutes
Ingredients
-
2 tablespoons olive oil
-
1 lb (450g) Portuguese linguiça, sliced into ¼-inch rounds
-
1 large yellow onion, chopped
-
4 cloves garlic, minced
-
2 medium potatoes (Yukon Gold or Russet), peeled and diced small
-
6 cups chicken or beef broth (low-sodium preferred)
-
1 bay leaf
-
½ teaspoon smoked paprika (optional, for extra smokiness)
-
½ teaspoon crushed red pepper flakes (adjust to taste)
-
Salt and black pepper, to taste
-
1 small head green cabbage (about 1 lb), cored and thinly sliced
-
1 can (15 oz) cannellini or kidney beans, drained and rinsed (optional, for heartiness)
-
1 tablespoon red wine vinegar (optional, for brightness)
-
Chopped fresh parsley, for garnish
-
Crusty bread, for serving
Instructions
-
Brown the Linguica
-
Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium heat.
-
Add linguiça slices and cook for 5-6 minutes, stirring occasionally, until browned and the fat has rendered. Remove with a slotted spoon and set aside, leaving the flavorful oil in the pot.
-
-
Sauté Aromatics
-
Add the chopped onion to the pot and cook for 4-5 minutes until softened and translucent.
-
Stir in the garlic and cook for 1 minute until fragrant.
-
-
Cook the Potatoes
-
Add the diced potatoes, broth, bay leaf, smoked paprika, and red pepper flakes. Stir to combine.
-
Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until the potatoes are fork-tender.
-
-
Optional: Thicken the Broth
-
For a creamier soup: Remove about 1 cup of the cooked potatoes and broth, mash until smooth, and stir back into the pot. Alternatively, use an immersion blender to briefly blend a small portion of the soup right in the pot.
-
-
Add Cabbage and Beans
-
Stir in the shredded cabbage and optional beans. Return the browned linguiça to the pot (reserve a few pieces for garnish if desired).
-
Simmer uncovered for 10-15 minutes until the cabbage is tender but still has a slight bite.
-
-
Season and Finish
-
Discard the bay leaf. Taste and season with salt (carefully—linguiça and broth can be salty) and black pepper.
-
Stir in the red wine vinegar for a touch of brightness, if using.
-
-
Serve
-
Ladle into bowls, garnish with fresh parsley, and serve with crusty bread for dipping.

Tips & Variations
-
Caldo Verde Style: If you want a more traditional caldo verde, slice the cabbage into very thin strips, omit the beans, and purée the soup base until silky before adding the cabbage and linguiça. Finish with a drizzle of extra virgin olive oil.
-
Spicier Kick: Use hot linguiça or increase the red pepper flakes. Some Portuguese cooks also add a small splash of piri-piri sauce.
-
Greens Swap: Substitute kale or collard greens for the cabbage if you prefer—just adjust the cooking time as needed.
-
Make It Ahead: The soup tastes even better the next day. Store refrigerated for up to 4 days or freeze for up to 3 months.
