Here is the ultimate “dump and go” comfort food recipe. This slow cooker hamburger potato casserole requires only 4 main ingredients, but yields a hearty, savory, stick-to-your-ribs meal that tastes like you spent hours layering flavors.
This is a fantastic recipe for busy weeknights because there is no pre-browning of the meat or pre-cooking of the potatoes required!
Why this works
As the casserole cooks, the beef seasons the potatoes from the bottom up, while the condensed soup creates a creamy, gravy-like sauce. The cheese melts into the layers, binding everything together. It is essentially a deconstructed cheeseburger and fries in one pot.
Ingredients
The “Big 4”:
-
1.5 lbs Lean Ground Beef (90/10 or 93/7 works best; if you use 80/20 it may be a bit greasy)
-
4–5 medium Russet Potatoes (about 2 lbs), scrubbed and sliced into 1/4-inch thin rounds
-
1 (10.5 oz) can Condensed Cheddar Cheese Soup (or Cream of Mushroom/Onion soup if you don’t have cheddar)
-
2 cups Shredded Sharp Cheddar Cheese (divided)
Pantry Staples (for seasoning and moisture):
-
1/2 cup Beef Broth or Milk
-
1 tsp Garlic Powder
-
1 tsp Onion Powder
-
1/2 tsp Black Pepper
-
1/2 tsp Salt
Optional Toppings:
-
Crumbled bacon, diced pickles, or chopped green onions (to make it taste exactly like a bacon cheeseburger).
Instructions
1. Prep the Slow Cooker and Potatoes
-
Spray the inside of your slow cooker basin heavily with non-stick cooking spray. (Cheese and potatoes love to stick to the sides).
-
Layer half of the sliced potatoes evenly in the bottom of the slow cooker. Sprinkle them lightly with salt and pepper.
2. Season the Beef
-
In a medium mixing bowl, combine the raw ground beef, garlic powder, onion powder, black pepper, and the 1/2 tsp of salt.
-
Using your hands or a fork, gently mix the seasonings into the meat. Do not overwork it—you want it to stay tender.
-
Break the raw beef into small chunks (about the size of a walnut) and drop them evenly over the first layer of potatoes. Note: You can also leave it in a flat layer, but smaller chunks help it cook through evenly and make serving easier.
3. Layer the Casserole
-
Add the remaining half of the sliced potatoes directly on top of the raw beef.
-
In a small bowl, whisk together the can of condensed cheddar soup and the 1/2 cup of beef broth (or milk) until smooth. This thins the soup out slightly so it can seep down into the layers.
-
Pour the soup mixture evenly over the top of the potatoes. Tap the slow cooker gently on the counter to help the liquid settle down into the gaps.
4. Slow Cook
-
Place the lid on the slow cooker.
-
Cook on LOW for 5–6 hours or on HIGH for 3–4 hours.
-
Pro Tip: Do not lift the lid during the first 80% of the cooking time. The potatoes need that trapped steam to get tender.
5. Add the Cheese
-
About 15–20 minutes before you are ready to eat, check the potatoes with a fork. They should pierce easily with no resistance.
-
Sprinkle the 2 cups of shredded cheddar cheese evenly over the top of the casserole.
-
Replace the lid and let it cook for another 15–20 minutes, until the cheese is completely melted and gooey.
6. Rest and Serve
-
Turn the slow cooker off. Let the casserole sit, uncovered, for about 10 minutes. This allows the sauce to thicken slightly so it isn’t runny.
-
Scoop onto plates and top with crumbled bacon, diced pickles, or a dollop of sour cream if you like!
Recipe Tips & Substitutions
-
Can I use ground turkey? Yes! Ground turkey or chicken works perfectly here. Because poultry is leaner, add 2 tablespoons of melted butter or olive oil to the meat mixture to keep it moist.
-
The “4-Ingredient” rule: If you don’t want to use the beef broth, you can use water or milk. If you want to keep it strictly 4 ingredients, simply use salt, pepper, and the soup only—the beef and potatoes will release enough liquid to cook.
-
Frozen Potatoes: You can swap fresh potatoes for a 32 oz bag of frozen diced hash browns. Just note that frozen hash browns cook a bit faster (about 4 hours on LOW).
-
Add Veggies: If you have them on hand, frozen peas or corn can be added in Step 3 for a complete one-pot meal.
