Instructions
1. Sear the Meat (Don’t Skip This Step):
Pat the chuck roast completely dry with paper towels. Season generously on all sides with salt, pepper, and garlic powder. Heat olive oil in a large skillet or Dutch oven over medium-high heat until shimmering. Sear the roast for 4-5 minutes per side until a deep, dark brown crust forms. This is where the deep beefy flavor comes from. Transfer the seared roast to your slow cooker.
2. Deglaze the Pan:
Reduce the heat under the skillet to medium. Add a splash of the beef broth and scrape up all the browned bits (fond) from the bottom of the pan with a wooden spoon. Once the roast and vegetables are cooked, carefully transfer the meat to a serving platter and use a slotted spoon to arrange the vegetables around it. Tent loosely with foil to rest.
